Our Story
Founded in 1868, Kitaoka Honten is a seventh-generation family brewery that has upheld traditional sake brewing for over 150 years. In 2000, the brewery began partnering with farmers across Japan to source fruit for a new style of sake, emphasizing sustainability by using unsold produce that would otherwise go to waste. To preserve the fruit’s natural freshness and juiciness, each piece is carefully washed, peeled, pitted, and hand-cut or diced. Through Joule heating sterilization, we retain the fruit’s vibrant color and authentic flavor.
Today, we bring SHEZEN to the world. Inspired by Shizen, the Japanese word for nature, SHEZEN reflects the essence of our family brewery in Yoshino, Nara Prefecture—a mountainous region and UNESCO World Heritage Site renowned for its temples, pilgrimage routes, and stunning natural landscapes. It’s a place where creativity and possibilities feel endless.
