With nearly 300 years of brewing experience, Kasumi Tsuru is unique in that it is one of the few breweries that crafts sake using only the Kimoto and Yamahai brewing methods. These methods produce complex, distinctive, umami rich sake. Being the local pride of the Tajima region is very important.
