Greg is the only American sakémaster. He received his training from Yoshio Koizumi, legendary sakemaster at Momokawa (Murai Family) Brewing, Japan. His approach is to combine old world tradition with modern technology and innovation to craft great American saké. Using water from Oregon’s Coast Range, premium saké rice from California, yeast and koji perfected over the past 200 years at Momokawa Brewing Japan, Greg brews at SakéOne’s unique state-of-the-art sakery. His sakés range from the delicate Silver, one-of a kind Asian Pear, to the robust G. They are designed to match the wide range of cuisines available in the U.S.
