Enlightened Grapefruit

1.5 oz Momokawa Organic Junmai Ginjo
1/2 oz Krogstad Aquavit (or quality substitute)
1/4 oz Fresh squeezed lime juice
1 oz Fresh squeezed grapefruit juice
1/2 oz Clover Honey Syrup*
1 dash Pechauid Bitters
1 oz. Club soda
Combine ingredients and stir well to dissolve the Clover Honey Syrup.
* To make honey syrup, in large container, add 2 parts clover honey to 1 part warm water. Stir until completely integrated, add 1 tsp of vodka as a preservative, store in a sealable container, and refrigerate until use.
